In Iran Raisin colors vary by their drying process. For example, a dark purplish black raisin or Black Raisin is sun-dried. A light to medium brown raisins or Sultana Raisin is dried under the shade. A golden to bright yellow raisins is dried under shade and is also treated with sulfur dioxide to retain color and is called Golden Raisin or Golden Bleached Raisins. Green Raisin is green in nature but if sulfur is added the color will have a yellowish green color to it.

In Iran we can divide the variety of raisins into Seeded Raisins Unseeded Raisins, Green raisins, rice raisins and currants. Green raisins and rice raisins are obtained from seedless grapes and Currant is provided from variety of seeded grapes. We explain raisins preparation method, because these names are related to raisins preparation method as well as the kind of grapes, which is used in raisins production. In Iran over 200 varieties of grapes have been named in different languages, but it is obvious that most of these names are related to one item that has found different names in different locations.

Raisin colors vary by drying process. For example, a dark purplish black raisin is sun-dried. A light to medium brown raisin is mechanically dehydrated in special drying tunnels. A golden to bright yellow raisin is mechanically dried and treated with sulfur dioxide to retain color.
Summary of types (varieties) of processed raisins.
Raisins are produced in three methods:
1) Drying the grapes without using an alkaline solution. (NON_NITRIFIED RAISINS)
2) Grapes cluster is taken into an alkaline solution previously, and then it will be dried in front of the sunlight. These two methods for raisins preparation are used in Iran as well (NITRIFIED RAISINS)
3) Grapes are placed are faced to Sulphur smoke.
Processed red raisins are a crucial horticultural export product, with 8,600 tons exported from Afghanistan in 2003. As with vineyards, many of the drying houses used for raisin processing were destroyed in the war. Today, green raisins (or kishmish) are generally dried in shaded and ventilated buildings, while red raisins are dried on roofs and on the ground. The raisins are sorted into three grades (by size and quality): the top grade goes to Russia and India, the second grade to Pakistan, and the third grade also to Russia.
Memory serves me right, rasion d’etre is a beer made by the fastest growing micro brewery in the country, dogfish head brewery, located in deleware. this beer is a bold approach, being that it uses a unique green raisin, also known as kishmish(persian), in combination with beet sugur and belgian yeast (love those crazy belgians!). the green raisin, for those who might not know, is a fruit which mainly comes from iran, afganistan, and china. but the difference in coulor is due to the drying process. green raisins are shade dried, whereas dark raisins are sun or mechanically dried. green reisins tend to be less sweet and more naturally fruity. this bold beer happened to make the “american beer of the year” in 2000 and has become a big winner in my book since i have moved to the east cost. It is a bit fruity, and you can definatly tell it is raisin, but it really isn’t the green raisin but the yeast and the richly malted hops that stands out. have i told you i love belgians?
